Combine lime juice, orange juice, minced garlic, chopped cilantro stems, cumin, salt, and pepper. Pour over steak in a ziplock bag. Marinate for 2-3 hours or overnight.
Don't marinate longer than 8 hours or the acid will make the meat mushy.
Remove steak from marinade and pat dry. Grill over high heat for 4-5 minutes per side for medium-rare. Let rest for 10 minutes before slicing.
Slice steak against the grain into thin strips, about 1/4 inch thick. This ensures tender, easy-to-bite pieces perfect for tacos.
Heat corn tortillas on a dry griddle or directly over a gas flame for about 30 seconds per side until lightly charred and pliable.
Wrap warmed tortillas in a clean kitchen towel to keep them soft and warm.
Place a generous portion of sliced steak on each tortilla. Top with finely diced white onion and fresh chopped cilantro. Serve with lime wedges and salsa verde.
